Avocado Mango Salad with Zesty Lime Dressing

A vibrant and refreshing salad featuring creamy avocados, sweet mangoes, and zesty lime dressing, perfect for summer gatherings.

  • 2 ripe mangoes, diced
  • 2 ripe avocados, diced
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Wash your mangoes, avocados, and cherry tomatoes under cool water. Pat the cherry tomatoes dry.
  2. Peel the mangoes with a sharp knife or peeler, slice down along the pit, and dice them into bite-sized pieces.
  3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Dice them into chunks, squeezing lime juice over them to prevent browning.
  4. Thinly slice the red onion. If the flavor is too strong, soak in cold water for a few minutes.
  5. Halve the cherry tomatoes and add them to the bowl.
  6. Chop the fresh cilantro and add to the mix.
  7. Whisk together lime juice and olive oil in a small bowl, adding salt and pepper to taste.
  8. Toss all ingredients in a large bowl, drizzle dressing over the salad, and mix gently.
  9. Plate your salad and serve with extra cilantro or lime wedges on top.

Notes

For variation, try adding grilled shrimp, chickpeas, or swap fruits for even more flavor. Adjust seasoning to your taste.
