  • 1 mango, diced
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the ingredients by slicing and dicing the avocado and mango into bite-sized pieces.
  2. Make the dressing in a small bowl by whisking together olive oil and lime juice.
  3. Combine the diced avocado, mango, and red onion in a mixing bowl, drizzling the lime olive oil dressing over the salad.
  4. Add the chopped cilantro, giving everything a gentle toss.
  5. Plate the salad into bowls or onto a serving platter and garnish with cilantro and lime wedges.

Notes

For added protein, mix in cooked quinoa or grilled chicken. You can also experiment with nuts, or jalapeños for heat.
