Baked Feta Eggs with Tomatoes and Spinach

A cozy breakfast delight featuring creamy feta, fresh eggs, and vibrant vegetables.

Ingredients

  • 1 cup Feta Cheese, crumbled
  • 4 large Eggs
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Fresh Spinach
  • 2 tbsp Olive Oil
  • Salt and Pepper, to taste
  • Red Pepper Flakes (Optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare an 8-inch oven-proof dish with a drizzle of olive oil.
  3. Layer half of the tomatoes and a generous handful of spinach in the dish.
  4. Crumble feta cheese over the vegetables.
  5. Crack the eggs on top of the feta and vegetables.
  6. Season with salt, pepper, and red pepper flakes, then drizzle with olive oil.
  7. Bake for 20-25 minutes, until the egg whites are set.
  8. Serve from the baking dish and enjoy!

Notes

Garnish with fresh herbs and serve with crusty bread or salad. Adjust cooking time based on preferred egg yolk doneness.
