Teriyaki Chicken Skewers

Delicious teriyaki chicken skewers grilled to perfection, infused with a savory marinade and garnished with sesame seeds and green onions.

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 810 wooden skewers, soaked in water for 30 minutes
  • 2 tablespoons sesame seeds (optional, for garnish)
  • Chopped green onions, for garnish
  • 1/4 cup soy sauce
  • 1/4 cup honey (or brown sugar)
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • 1 tablespoon mirin (optional)
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1/4 cup water (for cornstarch mixture)

Instructions

  1. Prepare the Marinade: In a bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, sesame oil, ginger, garlic, mirin (if using), and black pepper until well combined.
  2. Marinate the Chicken: Cut your chicken into 1-inch cubes and add them to a resealable plastic bag or a shallow dish. Pour the teriyaki marinade over the chicken, making sure it’s all coated. Seal the bag or cover the dish and let it marinate in the fridge for at least 30 minutes—up to 4 hours if you want a deeper flavor.
  3. Prep Your Skewers: If you’re using wooden skewers, make sure they’ve soaked for 30 minutes. Then, thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  4. Grill or Cook Them: Preheat your grill or skillet over medium heat. If using a grill, oil the grates lightly to prevent sticking. Place the skewers on the grill (or in the skillet) and cook for about 8-10 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  5. Optional Glazing: If you want a thicker glaze, mix the cornstarch with water to create a slurry. Brush this mixture onto the skewers during the last couple of minutes on the grill, and let it caramelize a bit.
