  • 1 lb boneless, skinless chicken breasts
  • 1/2 tsp garlic salt
  • 1/8 tsp black pepper
  • 2 tsp olive oil
  • 6 cups romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 English cucumber, sliced
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/2 small purple onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1/2 cup sliced almonds, toasted (for topping)
  • 1/2 cup extra virgin olive oil (for dressing)
  • 3 Tbsp apple cider vinegar (for dressing)
  • 2 tsp Dijon mustard (for dressing)
  • 2 tsp honey (for dressing)
  • 1 garlic clove, minced (for dressing)
  • 1 tsp sea salt (for dressing)
  • 1/4 tsp black pepper (for dressing)

Instructions

  1. Preheat your grill or stovetop grill pan to medium-high heat. Drizzle chicken with olive oil, then sprinkle with garlic salt and pepper.
  2. Cook the chicken on the grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  3. Chop the romaine, cherry tomatoes, cucumber, mango, avocado, and onion while the chicken cooks.
  4. Mix together the dressing ingredients in a small jar—shake well!
  5. Assemble the salad by combining the chopped veggies and sliced chicken in a large bowl.
  6. Toss with the honey vinaigrette until everything is evenly coated.
  7. Serve topped with toasted almonds for extra crunch.

Notes

Serve in large bowls or plate individually for a polished look. Keeps avocado and dressing separate if prepping ahead.
