The Ultimate Chicken Wrap

A delicious and comforting chicken wrap featuring fresh veggies and flavorful dressings, perfect for busy nights or lazy days.

  • 2 cups cooked chicken, shredded
  • 1 cup fresh spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, sliced thin
  • ½ avocado, sliced
  • ¼ cup shredded cheese (cheddar, mozzarella, or feta)
  • ¼ cup ranch dressing or your favorite vinaigrette
  • 4 large tortillas (whole wheat, spinach, or regular)
  • Salt and pepper to taste

Instructions

  1. Prepare your chicken: If using rotisserie chicken, simply shred it into bite-sized pieces. If grilling chicken breasts, cook until the internal temperature reaches 165°F, then let it rest for about 5 minutes before shredding.
  2. Chop your veggies: While your chicken is cooking or cooling, wash and prepare your veggies. Halve the cherry tomatoes, thinly slice the cucumber, and prepare your greens.
  3. Assemble your wraps: Lay a tortilla flat on a clean surface. Spread a layer of ranch dressing onto the base.
  4. Layer the goodness: Start with a generous portion of shredded chicken in the center. Next, add a handful of spinach or mixed greens, followed by layers of cherry tomatoes, cucumber, avocado, and cheese.
  5. Roll it up: Fold in the sides of the tortilla and then roll it tightly from the bottom.
  6. Slice and serve: Cut your wraps in half diagonally and arrange them on a plate with a dollop of extra dressing or tortilla chips on the side.

Notes
