Crispy Creamy BLT Pasta Salad

A delightful mashup of the iconic BLT sandwich and a creamy pasta salad, perfect for summer barbecues and casual lunches.

  • 8 ounces rotini pasta
  • 4 strips bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water. Add your rotini pasta and cook until al dente, usually about 8-10 minutes. Don’t forget to stir occasionally! Once done, drain and rinse under cold water.
  2. Prepare the Bacon: While the pasta cooks, fry up the bacon in a medium skillet over medium heat until crispy, about 4-5 minutes. Transfer to a paper towel-lined plate to drain and break into bite-sized pieces.
  3. Mix the Dressing: In a large bowl, combine mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, olive oil, salt, and black pepper. Stir until smooth. Taste and adjust seasoning as needed.
  4. Combine Ingredients: Add the cooked pasta, crispy bacon, halved cherry tomatoes, and chopped romaine lettuce to the bowl. Gently fold everything together until coated in the dressing.
  5. Chill and Serve: Let your pasta salad chill in the fridge for at least 30 minutes. Serve with extra bacon bits and cherry tomatoes for garnish!

Notes

This salad tastes even better the next day. Just give it a good stir before serving, as the pasta absorbs the dressing.
