Easy High-Protein Egg Bites

Delicious and simple high-protein egg bites, reminiscent of Starbucks treats, perfect for breakfast.

Ingredients

  • 12 large eggs
  • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/4 cup finely chopped spinach (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Blend the 12 large eggs in a large bowl until frothy and well-mixed.
  3. Add 1 cup of cottage cheese and 1/2 cup of milk, mixing until smooth.
  4. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, stirring well.
  5. Mix in 1 cup of shredded cheese and 1/2 cup of crumbled bacon or diced ham, as well as any optional ingredients.
  6. Prepare a muffin tin by greasing with non-stick spray or butter.
  7. Fill the muffin cups about 3/4 full with the egg mixture.
  8. Bake in the preheated oven for 25-30 minutes, until tops are set and slightly golden.
  9. Cool for a few minutes before running a knife around the edges to release.

Notes

These egg bites can be prepared ahead of time and stored in the fridge for up to five days or frozen for up to three months.
