Fresh Lime Mango Avocado Salad

A vibrant and refreshing salad featuring ripe avocados, sweet mango, and zesty lime, perfect for summer gatherings.

  • 2 ripe avocados, diced
  • 1 ripe mango, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Start by slicing the avocados in half, removing the pit, and dicing them into bite-sized pieces. Use a spoon to scoop them out into a large mixing bowl.
  2. Next, grab that gorgeous mango, peel it, and slice it up just like the avocados, adding them to the bowl too.
  3. Halve your cherry tomatoes and toss them in with the avocados and mango. Finely chop the red onion and add that to the mix as well.
  4. Chop the fresh cilantro and sprinkle that on top of the mixture.
  5. Squeeze the juice of two fresh limes over the salad, then season with salt and pepper to taste.
  6. Carefully toss everything together, ensuring not to mush the avocados.
  7. Allow your salad to rest for about 10 minutes to let flavors mingle.
