  • 1/2 cup diced red onion
  • 1 cup diced cucumber (about 1/2 of a medium cucumber)
  • 1 just-ripe avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh basil

Instructions

  1. Prep your ingredients: Start by washing all your produce thoroughly.
  2. Dice the mango: Slice the mangoes around the pit and peel the skin, then cube the flesh into bite-sized pieces.
  3. Chop your veggies: Dice the red bell pepper, red onion, cucumber, and avocado.
  4. Mix the dressing: In a small bowl, whisk together the lime juice, maple syrup, olive oil, and salt.
  5. Combine ingredients: In a large mixing bowl, gently toss together the diced mango, bell pepper, red onion, cucumber, and avocado.
  6. Add herbs: Sprinkle in the chopped cilantro, mint, and basil.
  7. Drizzle and toss: Pour the lime dressing over the salad and give it a light toss.
  8. Taste and adjust: Taste your salad and adjust seasoning if necessary.
