Fresh Watermelon Feta Salad with Mint and Lime

A refreshing summer salad combining juicy watermelon, creamy feta, fresh mint, and zesty lime.

Ingredients

  • 4 cups watermelon, cubed (about 600 grams)
  • 1 cup feta cheese, crumbled (about 150 grams)
  • 1/4 cup fresh mint leaves, roughly chopped
  • Juice of 2 limes (about 60 ml)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the watermelon by cutting it into bite-sized cubes.
  2. Combine the watermelon, crumbled feta, and mint in a large mixing bowl.
  3. Make the dressing by whisking together lime juice and olive oil in a small bowl.
  4. Dress the salad by drizzling the dressing over the watermelon and feta mix.
  5. Season with salt and pepper to taste.
  6. Serve the salad in a rustic bowl, garnished with extra mint leaves.

Notes

For a vegan version, substitute feta with crumbled marinated tofu. Use caution when cutting watermelon as it can be slippery.
