  • 1/2 cup creamy peanut butter (unsweetened, natural preferred)
  • 2 tbsp maple syrup (or honey, adjust to taste)
  • 1/2 tsp vanilla extract (pure)
  • 1/4 cup mini chocolate chips (optional)
  • 1 tbsp chopped peanuts (for topping)
  • 1 tsp flaky sea salt (for topping)

Instructions

  1. Combine the ingredients in a medium mixing bowl, adding the Greek yogurt, peanut butter, maple syrup, and vanilla extract. Blend until smooth.
  2. Taste and adjust the sweetness by adding more maple syrup or honey if desired.
  3. Add the mini chocolate chips to the mixture, stirring gently to combine.
  4. Portion the mixture onto a parchment-lined baking sheet using a small cookie scoop or tablespoon.
  5. Top with chopped peanuts and flaky sea salt before freezing.
  6. Freeze for 2-3 hours until solid, then store in a zip-top bag.
