Ingredients
- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, wilted
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Mix ricotta cheese, wilted spinach, Italian seasoning, salt, and pepper in a bowl.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer three lasagna noodles over the sauce.
- Add half of the ricotta mixture on top of the noodles, followed by half of the zucchini and bell pepper.
- Pour a layer of marinara sauce and sprinkle with mozzarella cheese.
- Repeat the layers, finishing with noodles, sauce, mozzarella, and Parmesan on top.
- Bake for 30 minutes or until golden and bubbly.
- Let it cool for 10 minutes before slicing and serving.
Notes
Feel free to add any vegetables you prefer, such as mushrooms or eggplant.
