Vegetarian Lasagna

A delicious and hearty vegetarian lasagna layered with fresh vegetables, ricotta cheese, and marinara sauce.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, wilted
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Mix ricotta cheese, wilted spinach, Italian seasoning, salt, and pepper in a bowl.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Layer three lasagna noodles over the sauce.
  6. Add half of the ricotta mixture on top of the noodles, followed by half of the zucchini and bell pepper.
  7. Pour a layer of marinara sauce and sprinkle with mozzarella cheese.
  8. Repeat the layers, finishing with noodles, sauce, mozzarella, and Parmesan on top.
  9. Bake for 30 minutes or until golden and bubbly.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

Feel free to add any vegetables you prefer, such as mushrooms or eggplant.
