Grilled Aloha Chicken and Pineapple

  • 1/4 cup honey
  • 1/4 cup pineapple juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon sesame seeds (optional)
  • 1/4 teaspoon black pepper
  • 4 boneless, skinless chicken breasts
  • 1 pineapple, peeled, cored, and cut into rings or chunks
  • 1 tablespoon honey (for glazing)
  • 1 tablespoon lime juice
  • 1/4 teaspoon ground cinnamon (optional)
  • Fresh cilantro or parsley, chopped
  • Lime wedges (for serving)

Instructions

  1. Prepare the marinade: In a medium bowl, combine the soy sauce, honey, pineapple juice, olive oil, minced garlic, minced ginger, black pepper, and ground cinnamon. Whisk it all together until well blended.
  2. Marinate the chicken: Place your chicken breasts in a large ziptop bag or a shallow dish, pour the marinade over, seal it up, and marinate in the fridge for at least 30 minutes.
  3. Prep the pineapple: Peel, core, and cut the pineapple into rings or chunks.
  4. Preheat the grill: Let it get hot—around medium-high heat.
  5. Grill the chicken: Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C).
  6. Grill the pineapple: Toss the pineapple slices on the grill after flipping the chicken, grilling for about 3-4 minutes on each side.
  7. Finish it up: Remove everything from the grill, let the chicken rest, then drizzle with honey and lime juice, and sprinkle with chopped cilantro or parsley.

Notes

Letting the chicken rest helps keep it juicy. You can serve this dish in a taco format or with coconut rice.
