Grilled Aloha Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh pineapple slices (for grilling)
  • Chopped green onions (for garnish)

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, ground ginger, and olive oil.
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish, pour the marinade over them, seal, and marinate for at least 30 minutes.
  3. Preheat the Grill: While the chicken is marinating, preheat your grill to medium-high heat.
  4. Grill the Chicken: Remove the chicken from the marinade, season, and place on the grill.
  5. Sizzle and Flip: Grill for 6-7 minutes on one side, then flip and grill for another 5-7 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Grill the Pineapple: In the last few minutes, add pineapple slices to the grill, cooking until warm and tender.
  7. Rest and Slice: Remove the chicken and let it rest for about 5 minutes before slicing.
  8. Plate It Up: Slice the chicken and serve with grilled pineapple, garnished with green onions.

Notes

For extra flavor, marinate overnight but not longer than 24 hours. Pair with coconut rice or fresh salad.
