Grilled Lemon Chicken

  • 4 boneless, skinless chicken breasts
  • 4 tablespoons olive oil
  • Juice of 2 large lemons
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the marinade by combining olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper in a mixing bowl. Whisk until well blended.
  2. Marinate the chicken by placing it in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish with plastic wrap.
  3. Preheat your grill to medium-high heat.
  4. Grill the chicken for about 6-7 minutes on one side, then flip and grill for another 5-7 minutes, until the internal temperature reaches 165°F (75°C).
  5. Rest the chicken for about 5 minutes before slicing.
  6. Serve the chicken on a platter, garnished with fresh parsley. Optional: serve with a lemon wedge.

Notes

For best flavor, marinate for at least 30 minutes, or overnight for optimal taste.
