Grilled Mango Pineapple Chicken

A delightful tropical dish that combines juicy grilled chicken with caramelized mango and pineapple.

  • 2 chicken breasts
  • 1 ripe mango, diced
  • 1 cup pineapple chunks
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lime wedges for serving
  • Chopped cilantro for garnish

Instructions

  1. In a medium bowl, whisk together olive oil, soy sauce, honey, garlic, salt, and pepper until combined.
  2. Place the chicken breasts in the bowl and coat them well with the marinade. Let it marinate for at least 30 minutes.
  3. Preheat your grill to medium-high (around 400°F).
  4. Add the chicken breasts to the grill, discarding the leftover marinade. Grill each side for about 6-7 minutes until cooked through.
  5. While the chicken is grilling, toss diced mango and pineapple in a bowl with a little olive oil, salt, and pepper.
  6. When the chicken is almost done, add the fruit to the grill for the last 2-3 minutes.
  7. Once everything is grilled to perfection, slice the chicken, arrange it with the grilled mango and pineapple, garnish with cilantro, and serve with lime wedges.

Notes

For a different experience, try swapping the pineapple for grilled peaches or add a tablespoon of sriracha to the marinade for a spicy kick.
