Grilled Pineapple Chicken

A delightful combination of sweet pineapple and savory grilled chicken that brings sunshine to your meal.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh pineapple, chopped
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the olive oil, garlic powder, onion powder, paprika, salt, black pepper, honey, lime juice, and soy sauce until blended.
  2. Marinate the Chicken: Place the chicken in a resealable bag or shallow dish. Pour half of the marinade over the chicken and refrigerate for at least 30 minutes.
  3. Prepare the Pineapple: Chop the pineapple into bite-sized chunks.
  4. Preheat the Grill: Heat grill to medium-high (around 400°F/205°C).
  5. Grill the Chicken: Remove chicken from marinade, grill for 6-7 minutes on each side until an internal temperature of 165°F (74°C) is reached. Brush with reserved marinade in last minutes.
  6. Add the Pineapple: During the last few minutes, grill the pineapple chunks for 2-3 minutes per side until caramelized.
  7. Garnish and Serve: Remove from grill, let the chicken rest, slice it, top with grilled pineapple, and sprinkle cilantro.

Notes

Serve with jasmine rice or a green salad for a balanced meal.
