High-Protein Chicken Ranch Quesadilla

A comforting and protein-packed twist on a classic quesadilla with shredded chicken, Greek yogurt, and ranch seasoning.

  • 1 low-carb tortilla
  • ½ cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 wedges Laughing Cow cheese
  • 1 tablespoon ranch seasoning
  • Cooking spray or a small amount of olive oil

Instructions

  1. Prep your ingredients by gathering them and preheating a non-stick skillet over medium heat.
  2. Mix the filling by combining shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning in a bowl.
  3. Assemble the quesadilla by spreading half of the chicken mixture on one half of the tortilla and folding it over.
  4. Cook the quesadilla in the skillet for 3-4 minutes on one side until golden brown, then flip and cook the other side for another 3-4 minutes.
  5. Slice the quesadilla into wedges and serve hot with salsa, guacamole, or ranch.

Notes

For a spicy kick, add sliced jalapeños or chili flakes to the filling. To keep it vegetarian, swap chicken for sautéed bell peppers and black beans.
