High-Protein Creamy Chicken Broccoli Pasta

A comforting pasta dish combining hearty penne, fresh broccoli, tender rotisserie chicken, and a rich creamy sauce.

  • 1 lb Penne Pasta
  • 4 cups Broccoli Florets
  • 2 tbsp Olive Oil
  • 1 medium Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Butter
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth, low-sodium
  • 1 cup Parmesan Cheese, freshly grated
  • 1/2 cup Mozzarella Cheese, shredded
  • 4 cups Rotisserie Chicken, shredded
  • 1 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Red Pepper Flakes (optional)
  • Salt & Pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a rolling boil over high heat. Add the penne pasta and cook according to package directions until al dente, about 10-12 minutes. When the pasta is just about done, toss in the broccoli florets and cook together for the last 2-3 minutes.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Follow with the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the butter to the skillet and let it melt completely. Pour in the heavy cream and chicken broth, stirring continuously to combine. Bring to a gentle simmer.
  4. Whisk in the grated Parmesan and shredded mozzarella until they melt into a creamy sauce, around 3-4 minutes.
  5. Stir in the shredded rotisserie chicken, Italian seasoning, garlic powder, and red pepper flakes (if using). Mix until combined and the sauce begins to thicken.
  6. Drain the cooked pasta and broccoli (reserve some pasta water). Add to the skillet with the creamy sauce and toss to coat. If too thick, add some reserved pasta water to reach desired consistency.
  7. Taste and season with salt and pepper as needed. Serve warm.

Notes

For an elevated serving, sprinkle extra Parmesan on top and serve with crusty bread. Adjust spices to personal preference for variations.
