High Protein Pancake Bowls

  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 cup Fresh Berries
  • 1/2 cup Nuts
  • To taste Maple Syrup

Instructions

  1. Prepare the Batter: In a medium mixing bowl, crack the eggs and whisk them until they’re light and frothy. Add your sweetener and vanilla extract.
  2. Combine Yogurt: Stir in the Greek yogurt until it’s well incorporated with the egg mixture.
  3. Dry Ingredients: In another bowl, whisk together the all-purpose flour and baking powder. Slowly add this mixture to your wet ingredients, folding gently until just combined.
  4. Heat the Pan: Preheat a non-stick skillet over medium heat and lightly grease it with cooking spray or a touch of butter.
  5. Cook the Pancakes: Pour about a quarter cup of batter onto the skillet for each pancake. Cook until bubbles start to form on the surface, about 2-3 minutes.
  6. Flip and Finish: Flip the pancakes and cook for another 2 minutes until they’re golden brown.
  7. Assemble the Bowl: Stack those fluffy pancakes high in a bowl. Top with fresh berries, nuts, and drizzle with maple syrup.
  8. Enjoy: Dig in immediately for a warm, filling breakfast!
