Honey Mustard Chicken Salad

A wholesome and flavorful twist on classic chicken salad, featuring tender chicken, vibrant veggies, and a zesty honey mustard dressing.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup toasted walnuts or almonds (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Pound the chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness.
  2. Season the chicken with olive oil, salt, and pepper.
  3. Cook the chicken in a non-stick skillet over medium heat for 6-7 minutes on each side until golden brown and fully cooked.
  4. Mix the dressing by whisking together Dijon mustard, honey, apple cider vinegar, garlic powder, and olive oil.
  5. Prep the veggies: slice cucumbers, julienne carrots, and halve cherry tomatoes.
  6. Combine the mixed greens, cucumber, carrot, red onion, and cherry tomatoes in a large bowl.
  7. Slice the cooked chicken into bite-sized pieces and add to the salad.
  8. Top with honey mustard dressing and toss gently.
  9. Garnish with toasted walnuts or almonds and crumbled feta cheese if desired.
  10. Serve the salad in individual plates or a large bowl.

Notes

This salad can be served cold, making it perfect for meal prep. Store the dressing separately to keep the greens fresh.
