Honey Mustard Chicken Salad

  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 23 tablespoons honey
  • 1 teaspoon lemon zest
  • Pinch kosher salt
  • Pinch ground black pepper
  • 4 boneless skinless chicken breasts
  • ¼ cup soy sauce (or tamari or coconut aminos)
  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons garlic (minced)
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 4 cups romaine lettuce (chopped)
  • 1 ½ cups blueberries
  • 1 cup gorgonzola cheese (crumbled)
  • 1 cup slivered almonds
  • 1 cup bacon (crumbled)
  • ½ cup dried cranberries (or cherries)

Instructions

  1. Marinate the chicken: In a large bowl, combine the soy sauce, olive oil, Worcestershire sauce, minced garlic, lemon juice, lemon zest, salt, and pepper. Stir well. Add the chicken breasts and coat them in the marinade. Cover and chill in the fridge for at least 30 minutes.
  2. Preheat your grill or skillet over medium heat. Grill the chicken for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Remove and let it rest before slicing.
  3. Prepare the honey mustard dressing: Whisk together Greek yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a medium bowl until smooth.
  4. Assemble the salad: Toss together the romaine lettuce, blueberries, gorgonzola cheese, slivered almonds, crumbled bacon, and dried cranberries in a large bowl. Top with sliced grilled chicken.
  5. Drizzle the honey mustard dressing over the salad. Toss gently and serve immediately!
