Honey Pineapple Grilled Chicken

A delightful combination of sweet honey and tropical pineapple, this grilled chicken recipe is perfect for summer nights.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh pineapple slices for garnish

Instructions

  1. Make the Marinade: In a medium bowl, combine the pineapple juice, honey, soy sauce, olive oil, garlic powder, ground ginger, salt, and pepper. Whisk it all together until the honey is well dissolved.
  2. Marinate the Chicken: Place the chicken breasts in a zip-top bag and pour the marinade over the top. Seal the bag and let it marinate in the fridge for at least 30 minutes.
  3. Preheat the Grill: Heat your grill to medium-high.
  4. Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill, cooking for about 6-7 minutes on one side.
  5. Flip and Finish: After 6-7 minutes, flip the chicken and grill for another 5-6 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Rest Time: Remove the chicken from the grill and let it rest for about 5 minutes.
  7. Garnish and Serve: Top with fresh pineapple slices.

Notes

Marinate overnight for maximum flavor. Serve with coconut rice or a veggie salad.
