  • 1 cup quinoa
  • 2 cups chicken broth or water
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • Fresh parsley or cilantro for garnish

  1. Prepare the Marinade: In a medium bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, and a pinch of salt and pepper. Mix it up well!
  2. Marinate the Chicken: Place the chicken breasts into the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and let it soak up those flavors in the refrigerator for at least 30 minutes.
  3. Cook the Quinoa: Rinse the quinoa under cold water to remove its natural coating. In a medium saucepan, combine the rinsed quinoa and 2 cups of chicken broth or water. Bring it to a boil, then lower the heat, cover, and let it simmer for about 15 minutes.
  4. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side.
  5. Prepare the Veggies: While your chicken is grilling, chop the cherry tomatoes, cucumber, and bell pepper. Set them aside in a mixing bowl.
  6. Combine it All: Once the chicken is done, slice it into strips. Combine the quinoa with your chopped veggies and toss lightly. Then, add the sliced chicken on top.
  7. Garnish and Serve: Finish with a sprinkle of fresh parsley or cilantro and enjoy your hearty meal!
