  • 1 cup Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh herbs (like basil or parsley) for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and add your pasta. Cook according to package instructions until al dente, stirring occasionally.
  2. Save a cup of pasta water before draining.
  3. Prepare the dressing: In a large mixing bowl, combine the Greek yogurt, olive oil, lemon juice, salt, and pepper. Whisk until smooth and creamy.
  4. Mix the vegetables: Once the pasta is cooked and drained, let it cool for a few minutes. Then, toss the pasta into the bowl with the dressing. Add your halved cherry tomatoes, diced cucumber, and finely chopped red onion. Mix gently to combine.
  5. Add feta cheese: Gently fold in the crumbled feta cheese.
  6. Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
  7. Chill and serve: Cover your salad and let it chill in the fridge for at least 30 minutes to allow the flavors to meld beautifully.
