Protein Cottage Cheese Flourless Brownies

Indulge in these rich and fudgy brownies made with cottage cheese for a protein-packed twist on a classic dessert.

  • 1 cup cottage cheese
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the cottage cheese, cocoa powder, honey, peanut butter, eggs, vanilla extract, baking powder, and salt until smooth and creamy.
  3. Scoop the brownie batter into a greased or parchment-lined 8×8-inch baking pan, adding chocolate chips if desired.
  4. Bake for 25-30 minutes or until a toothpick comes out mostly clean.
  5. Cool the brownies in the pan for about 10 minutes before transferring to a wire rack.
  6. Slice into squares and serve as is or with whipped cream or ice cream.

Notes

These brownies can be customized with different nut butters, and are easily frozen for later enjoyment.
