Teriyaki Chicken Skewers

  • 3 lbs boneless skinless chicken thighs (cut into 1-inch pieces)
  • 1 cup soy sauce
  • 3/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp ginger (grated)
  • 1 tsp garlic (grated)
  • 1 tsp sesame seeds
  • 1/2 tsp pepper
  • Green onion for garnish
  • Skewers (wooden or metal)

Instructions

  1. Mix the marinade by combining soy sauce, brown sugar, rice vinegar, cornstarch, sesame oil, ginger, garlic, and pepper in a large bowl. Whisk until smooth.
  2. Marinate the chicken pieces in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  3. Prepare your skewers by soaking wooden ones in water for at least 30 minutes to prevent burning.
  4. Assemble the skewers by threading the marinated chicken pieces onto them, leaving space between each piece.
  5. Preheat the grill to medium-high heat (375°F to 450°F).
  6. Grill the skewers for about 8-10 minutes, turning occasionally until the chicken is cooked through (internal temperature of 165°F).
  7. Garnish the skewers with sesame seeds and chopped green onions before serving.
  8. Make the dipping sauce by simmering leftover marinade in a small saucepan for 5-10 minutes, ensuring it reaches a boil.

Notes

For a spicy kick, add sriracha to the marinade. You can also substitute chicken with tofu for a vegetarian option.
