Teriyaki Chicken Skewers

Delicious teriyaki chicken skewers, combining sweet and savory flavors, perfect for any gathering!

  • lbs boneless, skinless chicken thighs, cut into 1 inch pieces
  • ½ cup soy sauce
  • ¼ cup mirin
  • ¼ cup sake
  • 23 tbsp brown sugar or honey
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp toasted sesame oil (optional)
  • Bamboo or metal skewers

Instructions

  1. Make the Marinade: In a mixing bowl, combine soy sauce, mirin, sake, brown sugar (or honey), garlic, and ginger. Mix until the sugar is dissolved and everything is well-combined.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for maximum flavor).
  3. Prepare the Skewers: Soak bamboo skewers in water if using. Rinse metal skewers clean.
  4. Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, snug but not tightly packed.
  5. Grill Time: Preheat grill to medium-high heat. Grill skewers for about 3-4 minutes per side, brushing with remaining marinade in the last minute of cooking.
  6. Rest and Serve: Remove skewers from the grill and let rest for a couple of minutes before serving.

Notes

For added flavor, drizzle with toasted sesame oil before serving. Serve with jasmine rice or an Asian slaw.
