  • 1 cup quinoa
  • 2 tbsp olive oil
  • 1 cup mixed bell peppers (chopped)
  • 1 carrot (sliced thinly)
  • 1 cup spinach
  • 1 tbsp soy sauce or tamari

Instructions

  1. Rinse and cook the quinoa: Rinse 1 cup of quinoa under cold water. Combine with 2 cups of water in a pot. Bring to a boil, then cover and let it simmer for 15 minutes until it fluffs up.
  2. Sauté the veggies: In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the sliced carrot and cook for about 3 minutes until it starts to soften.
  3. Add the bell peppers: Toss in your colorful bell peppers and continue to sauté for another 5 minutes.
  4. Stir in the spinach: Just before turning off the heat, add 1 cup of spinach. Cook until wilted and bright green.
  5. Combine quinoa and soy sauce: Once the veggies are cooked, fold in the quinoa and drizzle with soy sauce or tamari. Mix well, season with salt and pepper, and remove from heat.

Notes
