Quatre-quarts aux Pommes

A heartwarming French cake with a delightful apple flavor, reminiscent of childhood memories and family gatherings.

  • 4 eggs
  • 4 ounces granulated sugar (or brown sugar)
  • 4 ounces unsalted butter (or coconut oil)
  • 4 ounces all-purpose flour (or gluten-free blend)
  • 2 apples, peeled and diced
  • 1 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pan by greasing an 8-inch loaf pan with butter or lining it with parchment paper.
  3. Melt the butter in a small saucepan or microwave until liquid, then let it cool slightly.
  4. Mix the eggs and sugar in a large mixing bowl until pale and fluffy, about 4-5 minutes.
  5. Add the melted butter to the egg and sugar mixture, folding it in gently.
  6. Incorporate the sifted flour, baking powder, and salt into the wet ingredients without overmixing.
  7. Add the diced apples and fold them into the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 40-45 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra touch, serve with powdered sugar, whipped cream, or a scoop of vanilla ice cream.
