Autumn Caesar Salad with Delicata Squash Croutons

A delightful twist on a classic Caesar salad featuring cozy roasted delicata squash croutons.

  • 1 head romaine lettuce, chopped
  • 1 small delicata squash, sliced into rings
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • Optional: croutons or toasted nuts for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by slicing it into rings, removing seeds.
  3. Season the squash with olive oil, salt, and pepper.
  4. Roast the squash for about 20 to 25 minutes, flipping halfway through.
  5. Chop the romaine into bite-sized pieces and place in a large salad bowl.
  6. Mix the Caesar dressing with half of the Parmesan cheese.
  7. Assemble the salad by adding the roasted squash on top of the romaine and drizzling with the dressing mixture.
  8. Finish with remaining Parmesan cheese and optional toppings.

Notes
