  • 1 apple (any kind)
  • 60g walnuts
  • 1 carrot
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1 teaspoon mustard (Dijon or whole grain)
  • Salt and pepper to taste

Instructions

  1. Prepare the red cabbage by removing outer leaves, cutting in half, removing the core, and slicing thinly.
  2. Chop the apple into thin wedges or small cubes.
  3. Shred the carrot into fine pieces or julienne for an elegant look.
  4. Toast the walnuts in a dry skillet over medium heat for 5-7 minutes.
  5. Whisk the apple cider vinegar, olive oil, honey, mustard, salt, and pepper in a small bowl.
  6. Combine the red cabbage, apple, shredded carrot, and toasted walnuts in a large mixing bowl, then pour the dressing over and mix well.

Notes
