  • 4 cups mixed salad greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare the Salad Greens: Rinse your mixed salad greens under cold water and spin them dry in a salad spinner. Place them in a large salad bowl.
  2. Toast the Walnuts: In a small pan over medium heat, add the walnuts. Toast them for about 5-7 minutes, stirring frequently until they’re golden and fragrant, then set aside.
  3. Slice the Apples: Core and slice your Honeycrisp apples into thin wedges.
  4. Mix the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper. Taste and adjust seasoning.
  5. Assemble the Salad: Add the sliced apples, crumbled feta, toasted walnuts, dried cranberries, and red onion to the salad greens. Toss gently.
