Baked Potato with BBQ Chicken

A comforting classic featuring fluffy baked potatoes topped with tender BBQ chicken and cheese.

  • 4 large baking potatoes
  • 2 cups shredded BBQ chicken (cooked)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes by scrubbing under running water and patting them dry.
  3. Poke each potato several times with a fork.
  4. Rub with olive oil and sprinkle with salt.
  5. Bake the potatoes for 45-60 minutes until tender.
  6. Prepare the BBQ chicken by shredding it and mixing it with BBQ sauce, then heating.
  7. Shred the cheese if using a block.
  8. Assemble the potatoes by slicing them open, fluffing insides, and topping with BBQ chicken and cheese.
  9. Melt the cheese in the oven for an additional 5-7 minutes.
  10. Add sour cream and green onions before serving.
