BBQ Chicken Stuffed Sweet Potatoes

A comforting and healthy meal featuring sweet potatoes stuffed with BBQ chicken and coleslaw.

  • 4 Sweet Potatoes
  • 2 Cups Pulled Chicken
  • 1 Cup Barbecue Sauce
  • 1 Cup Coleslaw Mix
  • 2 Tablespoons Mayonnaise
  • 1 Tablespoon Apple Cider Vinegar
  • Salt and Pepper to Taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry your sweet potatoes thoroughly. Pierce each with a fork a couple of times to allow steam to escape during baking. Place them on a baking sheet lined with foil or parchment paper for easy cleanup. Bake for about 45-60 minutes, or until they’re tender.
  3. Toss your pulled chicken with the barbecue sauce in a bowl until well combined.
  4. Combine the coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper in another bowl. Toss until coated.
  5. Let the sweet potatoes cool for a few minutes. Slice each potato down the middle and gently fluff the insides with a fork. Stuff each potato with the BBQ chicken filling and top with coleslaw.
  6. Serve warm and enjoy!

Notes

For a vegetarian option, substitute pulled chicken with sautéed mushrooms or chickpeas. Try adding chopped apples or nuts to the coleslaw for extra crunch.
