BBQ Chicken Stuffed Sweet Potatoes

A comforting dish featuring BBQ chicken stuffed in sweet potatoes, topped with cheese and sour cream.

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and poke holes in them with a fork.
  3. Toss them in a bowl with olive oil, salt, and pepper until evenly coated.
  4. Place the sweet potatoes on a baking sheet lined with parchment paper and roast for about 45-60 minutes.
  5. Shred your cooked chicken if you haven’t already.
  6. Combine shredded chicken, BBQ sauce, red onion, lime juice, and cilantro in a bowl.
  7. Slice the roasted sweet potatoes down the middle lengthwise.
  8. Scoop the BBQ chicken mixture into each sweet potato pocket.
  9. Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes until the cheese is melted.
  10. Top each with sour cream and extra cilantro before serving.

Notes

This dish is great for meal prep and can be frozen for later use. Adjust the BBQ sauce to your preference.
