BBQ Chicken Sweet Potato Skillet

A delightful one-pan meal featuring tender sweet potatoes, juicy BBQ-coated chicken, and melty cheddar cheese.

  • 2 large Sweet Potatoes, peeled and diced
  • 2 cups Cooked Chicken, shredded
  • 1/2 cup BBQ Sauce
  • 1 Red Onion, diced
  • 1 cup Corn, fresh or frozen
  • 1 cup Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • Salt and Black Pepper to taste
  • 1 teaspoon Smoked Paprika
  • 2 Green Onions, chopped for garnish

Instructions

  1. Prepare your ingredients: Peel and dice the sweet potatoes into small cubes. Chop the red onion and green onions for garnish.
  2. Heat the skillet: Place a large skillet over medium heat and add about 2 tablespoons of olive oil. Let that heat up for a minute.
  3. Sauté the sweet potatoes and onions: Toss in diced sweet potatoes and onions, seasoning with salt and pepper. Sauté for about 10–12 minutes until tender, stirring occasionally.
  4. Add the chicken and corn: Once sweet potatoes are cooked, stir in the chicken, corn, and smoked paprika. Drizzle in BBQ sauce and mix well.
  5. Cheese and melting magic: Sprinkle cheddar cheese on top, cover the skillet, and cook until cheese melts, about 2–3 minutes.
  6. Finishing touches: Remove from heat and garnish with chopped green onions.

Notes

Feel free to swap the BBQ sauce for other sauces and add vegetables or grains for variety!
