Heartwarming Beef Stew

A cozy and comforting beef stew recipe that brings families together around the dinner table.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the cubed beef in batches and sear until browned on all sides.
  3. Throw in the chopped onions and minced garlic. Sauté until the onions become translucent.
  4. Add the sliced carrots and diced potatoes, then stir in the tomato paste, dried thyme, and bay leaf. Pour in the beef broth.
  5. Bring the mixture to a gentle simmer, then reduce the heat to low and cover. Cook for at least 90 to 120 minutes.
  6. Taste and adjust the seasoning as needed.
  7. Serve the stew in bowls, discarding the bay leaf.

Notes

This beef stew can also be made in a slow cooker for convenience.
