Cochon Confit à la Bière et Sirop d’Érable

A heartwarming rustic dish of pork confit cooked in beer and maple syrup, celebrating flavors of family and comfort.

Ingredients

  • 1.5 kg Pork (Shoulder or Shank)
  • 300 ml Brown Beer
  • 100 ml Maple Syrup
  • 2 Onions
  • 4 Garlic Cloves
  • Fresh Thyme
  • 1 Bay Leaf
  • Salt and Pepper to taste
  • Olive Oil

Instructions

  1. Prepare Your Pork
  2. Cut the pork into generous pieces (about 2-inch cubes).
  3. Season the pork with salt and pepper.
  4. Sear the meat in a pot with olive oil until browned.
  5. Add onions and garlic to sauté until soft.
  6. Stir in fresh thyme and bay leaf.
  7. Add the brown beer and scrape the bottom of the pot.
  8. Stir in maple syrup and return the pork.
  9. Cover and let it simmer for 2.5 to 3 hours on low heat.

Notes

This dish is even better when made ahead of time and reheated. Leftovers work great in sandwiches or tacos.
