Peach Cobbler Muffins

Fluffy, tender muffins filled with sweet, juicy peaches, perfect for breakfast or dessert!

  • 2 cups All-Purpose Flour (or gluten-free blend)
  • 3/4 cup Granulated Sugar (or coconut sugar)
  • 1 tbsp Baking Powder (ensure it’s fresh)
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt (consider sea salt)
  • 1 cup Milk (dairy or dairy-free)
  • 1/2 cup Unsalted Butter (melted, can substitute with oil)
  • 2 large Eggs (can substitute with flax eggs)
  • 1 tsp Vanilla Extract (use pure extract)
  • 1 cup Fresh or Canned Peaches (diced, well-drained if canned)
  • 1/2 tsp Ground Cinnamon
  • 1/4 cup Brown Sugar (or turbinado sugar for a crunch)
  • 2 tbsp Brown Sugar (or coconut sugar) for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a muffin tin by greasing it or lining with paper liners.
  3. Mix the dry ingredients in a large bowl: flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  4. Whisk the wet ingredients in another bowl: milk, melted butter, eggs, and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients, stirring until just combined.
  6. Fold in the diced peaches.
  7. Fill the muffin tins 2/3 full with batter.
  8. Add brown sugar with cinnamon topping over the batter.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins can be served warm with butter, drizzled with honey, or paired with ice cream!
