Peach Upside-Down Cake

A delightful dessert featuring juicy peaches arranged in a caramel layer on top of a moist cake.

  • 45 medium Fresh Peaches
  • 1/2 cup Unsalted Butter
  • 3/4 cup Brown Sugar
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 1 3/4 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Milk
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and slice the peaches into 1/2-inch thick wedges.
  3. In a 9-inch round cake pan, melt the butter over medium heat. Stir in the brown sugar until combined.
  4. Arrange the peach slices in the butter-sugar mixture.
  5. Cream the granulated sugar and remaining butter until light and fluffy.
  6. Add the eggs one by one, mixing well after each addition.
  7. Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture, alternating with milk.
  8. Pour the batter over the arranged peaches.
  9. Bake for 35-40 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10-15 minutes before flipping onto a serving plate.

Notes

Serve with whipped cream or vanilla ice cream, and feel free to add nuts for texture!
