Soft Zucchini Cookies That Melt in Your Mouth

Deliciously soft zucchini cookies that melt in your mouth, combining nostalgia and cozy baking.

  • 1 cup grated zucchini, well-drained
  • 2¼ cups all-purpose flour
  • 1 cup packed brown sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini using a box grater or food processor, and squeeze out excess liquid.
  3. Cream together the softened butter and brown sugar using an electric mixer until light and fluffy.
  4. Add the egg and vanilla extract, and mix until well combined.
  5. Whisk together the flour, baking soda, cinnamon, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  7. Fold in the grated zucchini and chocolate chips until evenly distributed.
  8. Scoop rounded blobs of dough onto a parchment-lined baking sheet.
  9. Bake for 10-12 minutes, or until edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier twist, you can substitute whole wheat flour or use coconut oil instead of butter. These cookies are also delicious with nuts or dried fruits.
