Boulettes Courgettes & Feta

Delightful zucchini and feta fritters that are crispy on the outside and tender on the inside, perfect for any meal.

Ingredients

  • 2 cups grated zucchini (well pressed to remove excess water)
  • 200 g feta cheese (crumbled)
  • 1 large egg
  • 1 cup breadcrumbs (can be gluten-free)
  • 1/4 cup fresh mint (or substitute with basil)
  • 1/4 cup fresh parsley
  • 3 tablespoons olive oil (for frying)
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Prep the zucchini by grating and squeezing out excess moisture using a clean dish towel.
  2. Mix the grated zucchini, crumbled feta, and egg in a large mixing bowl until well incorporated.
  3. Add the breadcrumbs, chopped mint, parsley, paprika, salt, and pepper. Mix until just combined.
  4. Form the mixture into small patties, about 2 to 3 inches in diameter.
  5. Heat olive oil in a large skillet over medium heat until shimmering.
  6. Fry the fritters in batches for about 3-4 minutes on each side until golden and crispy.
  7. Drain the fritters on a plate lined with paper towels to absorb excess oil.

Notes

Serve warm with yogurt or tzatziki. They make a fabulous appetizer or part of a mezze platter.
