Cozy Burger Bowls

A comforting twist on the classic burger, served in a bowl with crispy roasted potatoes and flavorful toppings.

  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 23 medium potatoes, cubed
  • 2 tablespoons olive oil, divided
  • 500 grams lean beef mince
  • Lettuce, shredded
  • Cheese, dairy-free or regular
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (dijon or yellow)
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop your potatoes into bite-sized cubes.
  3. Toss the potato cubes with 1 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper.
  4. Spread the potatoes onto a lined baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  6. Heat a large skillet over medium heat and add the remaining tablespoon of olive oil.
  7. Add the lean beef mince and cook until browned, seasoning with salt and pepper.
  8. Drizzle in your ketchup, mustard, and pickle juice, stirring to combine, and simmer for 2-3 minutes.
  9. In a serving bowl, start with a base of your crispy roasted potatoes.
  10. Top with shredded lettuce, followed by the seasoned beef.
  11. Sprinkle your favorite cheese on top while the beef is still hot.
  12. Finish with a few pickle slices and a drizzle of mayonnaise mixed with mustard and garlic powder.
