Cherry Pie Bars

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup cherry pie filling
  • 1/4 teaspoon almond extract (optional)
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch baking dish by greasing it lightly or lining it with parchment paper.
  3. Combine the softened butter, granulated sugar, and salt in a mixing bowl until light and fluffy.
  4. Add the flour gradually and mix until you have a soft dough.
  5. Press about two-thirds of the dough into the bottom of the prepared baking dish.
  6. Spread the cherry pie filling evenly over the crust and add almond extract if using.
  7. Crumble the remaining dough over the cherry filling.
  8. Bake for 30-35 minutes or until the top is golden and the filling is bubbly.
  9. Cool completely on a wire rack before slicing.
  10. Dust with powdered sugar before serving.

Notes

Feel free to substitute with gluten-free flour or experiment with different fruit fillings. These bars can be frozen for up to three months.
