Chicken Bacon Ranch Baked Potatoes

Baked potatoes stuffed with savory chicken, crispy bacon, and creamy ranch dressing for a cozy meal.

  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 6 strips bacon, cooked and crumbled
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes under cool running water and dry them off with a towel. Poke each potato with a fork about 6-8 times. Season them with salt.
  3. Place your potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes until easily pierced with a fork.
  4. Cook the chicken if not using leftovers until fully cooked and then shred it.
  5. Cook the bacon until crispy and crumble it into bite-sized pieces.
  6. Slice the baked potatoes open lengthwise, fluff the insides, and layer in chicken, bacon, ranch dressing, and cheese.
  7. Pop the loaded potatoes back into the oven for another 10-15 minutes until the cheese is melty.
  8. Garnish with chopped green onions and serve hot.

Notes

This recipe is versatile; try different toppings like BBQ sauce or veggies. Don’t skip poking holes in the potatoes!
