Delightful Chickpea Pasta Salad

A vibrant and wholesome Chickpea Pasta Salad, perfect for gatherings or a refreshing meal on its own.

  • 8 ounces short pasta (penne or shells)
  • 1 can (15 ounces) chickpeas (or 1½ cups of cooked chickpeas)
  • 1½ cups cherry tomatoes (halved)
  • 1½ cups cucumber (diced)
  • ½ cup Kalamata olives (or black olives)
  • ½ packed cup sun-dried tomatoes (preserved in oil, drained and chopped)
  • ⅓ cup red onion (chopped)
  • ½ cup corn (canned or frozen)
  • ½ cup parsley (finely chopped)
  • 1 large avocado (diced)
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice (or apple cider vinegar)
  • 2 tablespoons mustard (American or Dijon)
  • 1½ tablespoons maple syrup (or honey)
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon salt (more or less to taste)
  • ⅛ teaspoon black pepper

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a rolling boil. Add your short pasta and cook according to package instructions until al dente (8-10 minutes).
  2. Prep Your Ingredients: While the pasta is cooking, rinse and drain your canned chickpeas, slice the cherry tomatoes, dice the cucumbers, and prepare all your other ingredients.
  3. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice, mustard, maple syrup, dried oregano, garlic powder, salt, and black pepper. Taste and adjust for seasonings.
  4. Combine Everything in a Bowl: Once the pasta is cooked and drained, toss it in a large bowl with the chickpeas, tomatoes, cucumbers, olives, sun-dried tomatoes, red onion, corn, and parsley.
  5. Drizzle with Dressing: Pour the dressing over the salad mixture, gently fold together until well-coated, add diced avocado last.
  6. Chill & Serve: Let your salad chill in the fridge for at least 30 minutes before serving.

Notes

Great for make-ahead meals; gets better after a day in the fridge. Serve chilled over greens or in mason jars for lunch.
