Crack Chicken Stuffed Baked Potatoes

Comforting baked potatoes filled with creamy crack chicken, perfect for gatherings or a cozy dinner.

  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 1 packet Ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the russet potatoes under cool water and poke holes in each potato with a fork. Bake for 45-60 minutes until tender.
  3. Combine shredded chicken, ranch seasoning mix, cream cheese, and half of the cheddar cheese in a bowl.
  4. Add crumbled bacon and chopped green onions, then stir gently to combine.
  5. Scoop out the insides of each potato and mix with the filling.
  6. Stuff the chicken mixture into each potato and top with remaining cheddar cheese.
  7. Bake again for 10-15 minutes until cheese is bubbly and golden.
  8. Serve warm, garnished with green onions.

Notes

These stuffed potatoes are best enjoyed with a side salad or roasted vegetables. Drizzle with ranch dressing for extra flavor!
